Dinner:
Hamburger sliders on sweet potato "buns" with guacamole and chili mayo sauce
This one I ended up making multiple times.
Sweet Potato "Buns":
Directions:
- Preheat the oven to 400°F.
- Wash the sweet potato and cut into ½ inch slices.
- Line two baking sheets with foil. lightly coat one with olive oil or fat of choice and lay out the sweet potato slices. You will need 12 slices.
- Bake for 20−25 minutes. Flip the sweet potatoes halfway through. While the sweet potatoes cook prepare the burgers.
Burgers:
Directions:
1 lb ground beef
2 garlic cloves minced.
- In a medium bowl combine the ground beef, minced garlic, salt and pepper and form into six patties.
I bought my guacamole but you can make your own.
Chili Mayo sauce:
1/2 Cup homemade Mayo
1/2t chili powder
1/4 t onion powder
1/4 t garlic powder
1/4 t paprika
a squirt of lime
Salt and pepper
